Vegetable pork ragout with curled pasta squares
Ingredients for 4:
- 30 dkg „Família” curled larged square pasta
- 30 dkg pork chop
- 2 dl dry red wine
- 1 small celery’s head
- 1 db carrot
- 1 db parsley
- 5 dkg mature hard cheese( parmesan or gouda)
- 0.5 dl oil
- 3 dkg butter
- salt, freshly ground black pepper, flour, celery’s greens
Instructions:
Dice and stir the beef in flour, salt and fry it in oil. At the same time fry the diced vegetable in oil, add them to the beef, with some wine, and steam for approx. 3 hours. Cook the pasta as shown in the packaging, stir it into the ragout, serve with freshly cut celery’s greens and freshly ground cheese.
Chef’s recommendation
If you choose beef, grind the vegetable before adding them to the meat, cook them ready, to serve a rich, robust ragout.
