Squash and spicy vegetable ragout with egg barley
Ingredients for 4
- 30 dkg „Família” egg barley
- 1 kg mature tomatos
- 50 dkg green pepper
- 30 dkg asparagus squash
- 20 dkg red onion
- 2 quarter garlic, oil, salt
Instructions
Fry the sliced red onion and garlic over oil, until glassy, add the sliced green pepper and squash, a little salt, cover and fry. In a couple of minutes, add sliced tomatos, steam together over gentle fire, and add a little salt if necessary. Prepare and fry egg barley, for a golden color, add 3 as much hot water. Add 1 small red onion head, and a piece of green pepper. Steam over gentle fire, until the water boils away, cover, and put aside from fire. Ready to serve in 15-20 minutes.
Chef’s recommendation
Enrich the vegetable ragout with zukkini and eggplant, spice with fresh oregano and thyme.
